Should tomato fruits be stored at room temperature or in the fridge?
Tomatoes are very susceptible to temperature changes. The temperature itself is less important, since the optimal temperature for tomatoes storage is between 12°C and 21°C, which means room temperature in moderate climates and cooling in hot climates. If you buy your tomatoes when they are not fully red, you should store them at a higher temperature (17°C – 21°C), while if they are fully mature, you should prefer a cooler environment (12°C – 15°C). This will ensure optimal flavor and aroma. Try to avoid storing tomatoes in a refrigerator, as the temperature is too low and is not stable. If you have to refrigerate tomatoes, choose fully ripened fruits, store them for a short period (2-3 days) and let them warm to room temperature 20-30 minutes before use.
